Creamy Pasta with Salmon

Ingredients:

  • 12 oz (340 g) pasta (such as penne or fettuccine)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1 cup grated Parmesan cheese
  • 8 oz (225 g) salmon fillet, skinless and boneless
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp fresh dill or parsley, chopped (optional)
  • Lemon wedges for serving (optional)

Instructions:

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

  2. Prepare the Salmon: Season the salmon fillet with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the salmon for about 4-5 minutes per side, or until cooked through and flaky. Remove from the skillet and set aside. Once slightly cooled, flake the salmon into bite-sized pieces.

  3. Make the Sauce: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic and chopped onion over medium heat until softened and fragrant, about 2-3 minutes.

  4. Add Cream and Broth: Pour in the heavy cream and broth, stirring to combine. Bring to a simmer and cook for about 5 minutes, or until the sauce has slightly thickened.

  5. Finish the Sauce: Stir in the grated Parmesan cheese until melted and smooth. Add the lemon juice and season with salt and pepper to taste.

  6. Combine Pasta and Salmon: Add the cooked pasta and flaked salmon to the sauce, gently tossing to coat the pasta and salmon evenly with the sauce.

  7. Serve: Garnish with fresh dill or parsley if desired, and serve with lemon wedges on the side.
