Stuffed peppers

Here's a classic recipe for Stuffed Peppers:

Ingredients:

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup cooked rice (white or brown)
  • 1/2 pound ground beef or ground turkey
  • 1 cup canned diced tomatoes (or 1-2 fresh tomatoes, chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Peppers:

    • Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottom slightly so the peppers stand upright.
    • Blanch the peppers in boiling water for 3-4 minutes to soften slightly, then drain and set aside.
  3. Cook the Filling:

    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
    • Add the ground beef or turkey to the skillet. Cook until browned and cooked through, breaking it up with a spoon as it cooks.
    • Stir in the diced tomatoes, oregano, basil, paprika, salt, and pepper. Simmer for about 5 minutes to let the flavors meld.
  4. Combine with Rice:

    • Stir the cooked rice into the meat mixture. Mix well.
  5. Stuff the Peppers:

    • Spoon the filling into each bell pepper, packing it tightly. Place the stuffed peppers upright in a baking dish.
  6. Bake:

    • Sprinkle the shredded cheese on top of each stuffed pepper.
    • Cover the baking dish with aluminum foil and bake for 25 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  7. Garnish and Serve:

    • Garnish with chopped fresh parsley or basil before serving.
